Tadka (also called tempering, chaunk or vaghar) is the technique of blooming whole spices in hot fat — and it’s the fastest way to add extraordinary depth to dals, curries and vegetables. All you need is a small pan, some oil or ghee, and good whole spices.
The basic method
- Heat 1–2 tablespoons of oil or ghee over medium heat until it shimmers.
- Add whole spices in order of size — mustard or cumin seeds first, then whole dried red chillies, then aromatics like curry leaves.
- Listen: seeds should pop and sizzle within 15–30 seconds. Chillies darken slightly and smell toasty.
- Pour the whole sizzling mixture over your dal or curry immediately.
Common mistakes
Too-hot oil burns spices bitter in seconds — if the chillies turn black, start over. Too-cool oil and nothing blooms. Medium heat, constant attention, and whole spices with intact aroma are the whole secret.
