Should you buy red chilli powder or whole dried red chillies? Both come from the same fruit — but they behave very differently in the pan. Here’s how to choose.
Red chilli powder: colour + even heat
Powder disperses through a dish, giving uniform crimson colour and consistent heat in every bite. It’s the workhorse for curries, marinades, rubs and snacks where you want heat woven through the whole dish.
Whole dried chillies: bursts + aroma
Whole chillies deliver pockets of intense flavour — the crackle of a tadka, the smokiness of a roast, the slow release in pickles and oils. They also keep longer, since their volatile oils stay sealed inside the pod.
Our take
